Pinch

Like many restaurants and food ventures, the idea for Pinch was born in the home kitchen. Similar to falling in love, it’s sometimes hard to pinpoint the exact moment that *it* happened. While living in Edinburgh back in 2009, inspired by a recent trip to Puerto Rico, I was cooking sweet Caribbean-style pork loin and fried plantains for friends in my new flat. I wanted a fun, communal starter and had been on a chipotle pepper kick, so tried my hand at whipping up some turkey-chipotle potstickers. They were a hit, and from there the limitless ideas for dumpling fillings grew organically, nurtured by dining and traveling – favourite pastimes of mine. Since then, there have been a few starts and stops for the not-yet-named "Pinch" venture, not to mention a move to Amsterdam in between. After years of fantasising about dumplings while in the corporate world, and with the encouragement of my partner Ed, we decided to give Pinch a proper go by opening our home to paying (eek!) strangers (yikes!) on Restaurant Day in February of 2015. The event went so incredibly well that it gave us the confidence to push ahead with Pinch. Fast-forward to now, and Pinch dumplings are available in 20 retail locations across the Netherlands! A few years on, and we can boast a Great Taste Award, Michelin * dumplings, nominations for the Food100 awards, finalist slots in both the National Restaurant Pitch and the Amsterdam Food Pitch.
